    There is no law that says you must pasteurise beer and we did fill some cans for another customer without pasteurising. However it was against my recommendation as cans are made in a factory, travel on a lorry to us and sit in our warehouse for 2-3 days before use. Although they are covered, they will be full of airborne bacteria and wild yeasts. We pass them through an ionised air rinser to remove any dust particles but they are still not sterile. Bottles are usually rinsed with sterile water before filling.

    I persuaded the customer to let me produce some packs pasteurised as a reference test. Although the unpasteurised beer tasted slightly better, after 6 weeks many cans were infected. We have now produced their next batch with 12-15 PU's and they have accepted the slight difference in taste. A product recall from a supermarket customer in this country can be very expensive.

    Based on that experience I know it is not possible to fill on our line without pasteurising and that is probably true for all the can lines in the UK. I did see a video of a small line in Hawaii which had a UV tunnel for the cans just before filling which would sterilise the cans but that would not be practical to fit on our line as space is short.

    I am sorry if that is disappointing for you but can assure you it is necessary to pasteurise and if oxygen control is good, the flavour is only slightly changed. People generally have a perception that canned beer tastes different to bottled or kegged beer anyway, which is perhaps not justified but they still do it.

    Normally for conditioning we would add finings to settle the solids and hold in tank for approx. 1 week. For canned beers we then kieselguhr filter adding Lucite (silica gel) for protein stabilisation followed by a PVPP filter for polyphenol stabilisation.
